Quinoa & sesame brownies
MAKES: 16 brownies
INGREDIENTS

Wet Ingredients

200g butter
-
200g raw sugar
-
4 eggs, beaten

4 Tbsp Bonsoy soy milk or almond milk
Dry Ingredients

100g Casalare Organic 'Pre-Cooked' Quinoa Flour

1tsp gluten free baking powder

75g cocoa powder
-
80g white toasted sesame, roughly ground

1/2C dark chocolate chips
Toppings
-
50 grams mixed nuts and seeds (cashew nuts, pine nuts, pumpkin seeds or sunflower seeds, etc)
DIRECTIONS
1. Preheat the oven to 170C. Line a 20cm x 20cm baking pan with baking paper.
2. In a large mixing bowl, beat butter until soft and fluffy. Slowly add in the sugar and gently beat.
3. Gradually add in eggs and continue beating until smooth.
4. In another bowl, mix the dry ingredients then add to the wet mixture. Mix well until batter forms.
5. Transfer batter into the prepared pan. Smooth the surface with a spatula and sprinkle nuts/seeds evenly over the batter.
6. Bake in the oven for about 20-25 minutes until a little break appears in the top and the batter is soft when you touch the top.
7. Remove from the oven and let cool on a wire rack then slice into bite size pieces to serve.
