INGREDIENTS (Serves 2):⁠
- 1 Box Casalare Gluten Free Vegie Penne⁠
- 1 tbs Spiral Extra Virgin Olive Oil⁠
- ½ Jar Riverina Grove Primavera Pasta Sauce⁠
- 1 Garlic Clove OR 1 tsp Riverina Grove Crushed Garlic⁠
- 100ml Cream⁠
- Parmesan Cheese⁠
- ½ Red Onion⁠
- 2 Sprigs Fresh Parsley⁠
⁠
METHOD:⁠
1. In a large pot of salted boiling water, cook the Vegie Penne as per box instructions, approx. 6 minutes.⁠
2. While the pasta is cooking, finely chop red onion and garlic.⁠
3. In a frying pan, add olive oil and gently fry the garlic and onions on a medium heat until fragrant, then reduce the heat right down. ⁠
4. Gently add the Riverina Grove Primavera Pasta Sauce in the frying pan with onions and garlic. (Ensure heat is low to avoid spitting of sauce). Once warm, add the cream.⁠
5. Drain the pasta reserving half a mug of pasta water.⁠
6. Add the pasta to the frying pan with sauce and gently stir through. If too dry, add a splash of the pasta water (Tip, GF Pasta can be more delicate than conventional wheat pasta, so ensure that you don’t over cook the pasta).⁠
7. Divide into serving bowls and top with finely chopped parsley and parmesan cheese. Salt and pepper to taste.⁠

2. Add the spaghetti and cook for 8-9 min until al dente.⁠

3. While your pasta is boiling, add the olive oil, garlic and red chili peppers to a frying pan and heat on medium-low.⁠
⁠
4. Add white wine and nori. Bring to a boil while stirring occasionally, then let it simmer for 1-2 mins.⁠
⁠
5. Drain the pasta (setting aside a bit of water), and add it to the frying pan, mixing directly into the sauce.⁠
⁠
6. Add the pasta cooking water and season with salt to taste.⁠
⁠
7. Turn the heat back to medium-high and continue stirring until the sauce has thickened and completely coated the pasta. ⁠
⁠

• 250g Casalare Macaroni Twist
• 1 Onion, finely diced
• 150g button mushrooms, thinly sliced
• 2 tsp Mustard
• 4 tbsp Butter
• 4 tbsp Casalare 'Not so' Plain Flour
• 700ml Milk (or Bonsoy is a good dairy alternative)
• ½C Grated Cheddar Cheese
• ¼C Grated Parmesan Cheese
• Salt and Pepper

DIRECTIONS

1. In a large pot (5 litres or more), boil 3-4 litres water and cook pasta as per directions. Rinse with warm running water and drain.

2. In a saucepan melt butter over medium heat, add onion and cook until transparent. Add mushrooms and cook. Add flour and stir through, gradually pour milk in while continually stirring until becomes thick. Add mustard and stir through. Add the pasta and mix through. Add both cheeses and mix through till well combined.

◘ 500g free range chicken breasts, diced in 3cm ⁠
◘ 2tsp dried Italian herbs⁠
◘ salt and pepper⁠
◘ 4 Tbsp butter⁠
◘ 1Tbsp Spiral Organic Minced Garlic ⁠
◘ 4Tbsp Casalare ‘Not So’ Plain Flour ⁠
◘ 2C Bonsoy Soy Milk⁠
◘ 1C Chicken broth⁠
◘ ½C grated parmesan⁠
◘ 1C shredded mozzarella⁠
◘ ¼C freshly chopped parsley⁠

METHOD⁠

1. Preheat oven to 180C and grease a baking or casserole dish with butter.⁠
⁠
2. In a large pot of boiling water add 2tsp salt and cook the pasta 6-7 minutes until al dente. Drain and set aside.⁠

3. Heat olive oil in a large frying pan or skillet over on medium heat. Season chicken with salt and pepper, sprinkle Italian herbs and cook through. Transfer chicken into a bowl. Wipe and clean the skillet.⁠
⁠
4. In the same skillet, melt 4Tbsp butter over medium heat. Add garlic and stir occasionally until garlic is fragrant. Stir in flour and cook for another minute until the mixture bubbles. Gradually pour soy milk and chicken broth and whisk until smooth.⁠

5. Bring mixture to a simmer and stir in parmesan. Simmer until sauce thickens, then season with salt and pepper. ⁠

6. Add cooked pasta and chicken to the sauce. Spread about half of the pasta mixture on the bottom of the baking dish, then sprinkle with half of the mozzarella. Add the remaining pasta mixture and top with the remaining mozzarella. Bake for about 8-10 minutes until cheese has melted. ⁠

Gluten Free & Vegan Creamy Mushroom Carbonara

INGREDIENTS (Serves 2)
--------------------

◘ Packet of our Casalare gluten free spaghetti
◘ 3 cups of mixed mushrooms
◘ 3 tablespoons @spiralfoods Extra Virgin Olive oil
◘ ½ teaspoon smoked paprika
◘ ½ teaspoon salt
◘ ¼ teaspoon ground pepper
◘ ½ cup cashews, soaked overnight
◘ ¼ cup @spiralfoods Extra Virgin Olive Oil
◘ ⅓ cup @originalbonsoy Soy milk
◘ 3 cloves garlic, chopped
◘ 1 ½ tablespoons nutritional yeast
◘ 1 ½ tablespoons lemon juice
◘ Fresh parsley, for serving

METHOD
-------------

1. Fry mushrooms in olive oil and seasoning for 10 minutes and set aside.
2. Make the carbonara sauce, by combing cashews, olive oil, garlic cloves, nutritional yeast, soy milk, lemon juice, pepper, salt, and paprika in a blender or food processor. Blend until smooth and creamy.

Gluten Free & Vegan Creamy Mushroom Carbonara

INGREDIENTS (Serves 2)

◘ Packet of our Casalare gluten free spaghetti
◘ 3 cups of mixed mushrooms
◘ 3 tablespoons @spiralfoods Extra Virgin Olive oil
◘ ½ teaspoon smoked paprika
◘ ½ teaspoon salt
◘ ¼ teaspoon ground pepper
◘ ½ cup cashews, soaked overnight
◘ ¼ cup @spiralfoods Extra Virgin Olive Oil
◘ ⅓ cup @originalbonsoy Soy milk
◘ 3 cloves garlic, chopped
◘ 1 ½ tablespoons nutritional yeast
◘ 1 ½ tablespoons lemon juice
◘ Fresh parsley, for serving

METHOD
-------------

1. Fry mushrooms in olive oil and seasoning for 10 minutes and set aside.
2. Make the carbonara sauce, by combing cashews, olive oil, garlic cloves, nutritional yeast, soy milk, lemon juice, pepper, salt, and paprika in a blender or food processor. Blend until smooth and creamy.

Lasagne Cups - no more messy slices or uneven servings, just perfectly portioned layers of goodness!

INGREDIENTS (Serves 4)

◘ 2Tbsp Casalare ‘Not So’ Plain Flour
◘ 2-3 Tbsp Casalare Rice Crumbs
◘ 1 chicken breast (about 200-250g)
◘ salt and pepper
◘ 1C chicken broth
◘ 2Tbsp Spiral Foods Organic Extra Virgin Olive Oil
◘ 300-350g button mushrooms, thinly sliced
◘ 250-300g baby spinach
◘ 2C Aurelio Organic Basilico Pasta Sauce
◘ 8 Casalare Lasagne Sheets, halved
◘ 1C Bonsoy Soy Milk, room temperature
◘ 2Tbsp butter
◘ 1C shredded cheese

DIRECTIONS

1. In a pot, heat 1 Cup chicken broth, and cook chicken through. Remove chicken and shred. Soak the shreds in the broth and drain before adding the broth to bechamel sauce later on.

2. Heat 1Tbsp olive oil in a frying pan. Add the mushrooms, salt and pepper to taste, transfer to a plate and set aside. In the same frying pan, heat the remaining olive oil and cook the spinach. Salt and pepper to taste.

3. Melt butter in a small saucepan and add the flour, stir well on low heat until it begins to bubble. Gradually add soy milk and the broth on medium-high heat and whisk to make a smooth bechamel. If the sauce is too thick, add some more soymilk. Set aside.

4. Preheat the oven to 200C. In a ramekin, arrange the layers in this order: spread 2Tbsp pasta sauce on the bottom, add the lasagne sheets, chicken, mushroom, spinach and cover with bechamel. Repeat and top with shredded cheese and rice crumbs. Bake in the oven for 15-20 minutes until the cheese has browned lightly and serve.
